Coconuts: bad rap for a good clean food
It wasn’t so long ago, avocados had a bad rap for being unhealthful because of their "high, bad fat." I remember correcting clients, telling them the fat was "good fat" -- and they should eat avocados in abundance.
Now it’s the same story with coconuts. My client "Joy" has great admiration for doctors. Joy showed me a list of don’ts given to her by her doctor. On that list was coconut.
Perhaps his thinking and information were outdated, I told Joy. I showed her (in print) the marvelous things about coconut and how it should be part of our healthful diet. (She would have none of it!).
Coconut has an abundance of properties that help our bodies thrive and can now be found in supplement form in most health food/vitamin stores.
Coconut is high in protein, good carbohydrates and good fat. Coconut water is high in electrolytes and gives efficient hydration. Coconut provides fiber, which boosts digestion. It is quite refreshing raw, and is a tasty addition to lots of cooked dishes.

If you cook coconut like in a THai restaurant dish is it still good for nutrition and a healthy diet?

We took up using coconut oil for cooking and even as a substitute for butter. It has a fresh, sweet, clean taste, and of course, keeps forever. We use David Wolfe's raw coconut oil in our kitchen. Great stuff.

Hi Jonathan,
If you'll read a little history about how atrocious the negative publicity with regards to coconut oil was decades ago, it should really have obliterated coconut oil from the face of the earth.
But because all the unjust criticisms were lies simply to benefit coconut oil's competition, and because the health benefits of coconut oil is just too much or should I say AWESOME, not even decades of maligning can keep this humble tropical oil down for long.
Because of many courageous people like you, coconut oil is once again flexing its muscles to regain its rightful place as, The King Of Oils.
Cheers,
Frederick
